I hope everyone had a great weekend! We did! Here’s what went on:
I found a fondue pot at Walmart on clearance for $10. (Score!) So we tried that out with some strawberries that we dunked in the chocolate and then coconut and peanuts. Good but I really wish I had bought bananas.
Carly was cute and cheerful as always making us smile and laugh. She is starting to move but we have to give her motivation by placing our phones just barely out of her reach (kids always want what they aren’t supposed to play with!).
Nick is helping me learn to be a better patient as he learns to be a doctor. He has his physical exam final on Friday which means I get a physical exam almost every day! Lots of deep breaths, wide eyes (I really hate that bright light but I’m getting better at keeping my eyes open and still so we’re getting faster), and a little bit of bruised knees (I think my reflexes are messed up because it doesn’t work so well on me).
Sunday was great! I got to teach a lesson to the adult women in our church on finding the strength to endure trials as we become truly converted to the gospel of Christ. I love teaching because I get to learn so much I as prepare the lesson and I learn even more from the thoughts shared as we discuss. After church we had a couple and their 3 year old over for dinner for pork burritos. I’ll share that recipe later this week because it was delicious and super easy (crock pot). We had a good time chatting and getting to know them better as well as listen to their cute boy say the funniest things. I can’t wait for Carly to talk, but then again I’m told that once she does she will never stop and I’ll be begging her to stop.
On to the food… These are seriously magic in your mouth! It’s like a candy bar but homemade and better! I think that it’s the sweetened condensed milk that makes the magic. How is that stuff even called “milk”? It’s like pure yummy sweetness! Oooh have you ever had Skor Cake, Better than *** Cake, or whatever they call it where holes are poked in the cake and then sweetened condensed milk and caramel are poured over it and seep into the entire cake making it moist and better than ***? I need to make that soon. But I digress. Just go make these magically delicious bars!
Note: I have seen these made with butterscotch chips too so you can add those as well (I’m not a fan of them in this bar though) and you can even change out the type of nuts, especially if you are allergic to walnuts. 🙂
Magic Bars
Ingredients
- 1/2 cup butter, melted
- 1 cup graham cracker crumbs
- 1 cup shredded coconut
- 1 cup semi-sweet chocolate chips
- 1 cup walnuts, coarsely chopped
- 1 14 ounce can sweetened condensed milk
Instructions
- Preheat oven to 350 degrees F.
- Mix graham cracker crumbs with melted butter until evenly moist. Press mixture into a 9x9 inch pan.
- Layer with coconut, chocolate chips, and then nuts. (I like to sprinkle half the chocolate chips, then walnuts, and then the rest of the chips- just for looks!)
- Evenly pour condensed milk over the top.
- Bake for 25-30 minutes until top is light brown.
- Cool completely before cutting.
My mouth is watering looking at them!!!
I have never made these Melanie but whenever they are brought to potlucks I always have to have one!
So are you enjoying your ward? Are there other LDS medical students? I hope you have a good support system. I have such great memories of our time in medical school because of the amazing people we met and still keep in touch with today.

I love our ward! Everyone has been so kind and welcoming. There are 2 other LDS med students in Nick’s class. Both are married and each have one kid. We have become really close with both of them. We wives get together every week with our kids to go to the zoo or craft. There are quite a few other students in Nick’s class who are married and we have become close friends with a few of them too. We absolutely love it here!
