In a shallow bowl (I like to use a pie dish), combine flour, seasoned salt, ground mustard, garlic powder, paprika, and pepper.
Press each pork chop into flour mixture, coating both sides and edges.
Heat oil in a large skillet over medium-high heat and brown pork chops on both sides. About 2 minutes per side.
Remove pork chops from pan and place in slow cooker.
In a bowl, whisk leftover flour mixture with chicken broth and pour it over the chops in the slow cooker. Cover and cook for 3-4 hours on low until meat is tender.
When done, remove chops and stir the gravy with a whisk to remove any lumps. Strain gravy if desired. Serve pork chops with mashed potatoes and top both with the gravy.
