1sweet onion, diced
1 1/2cupscarrots, diced
1cupcelery, diced
5clovesgarlic, minced
1candiced tomatoes
1can(6 ounce) tomato paste
1tablespoonsdried oregano
2 1/2teaspoonsdried basil
1 1/2teaspoonswhite pepper
1teaspoonsalt

7teaspoonsbeef bouillon
6teaspoonschicken bouillon
1cankidney beans, drained and rinsed
1/2cuppearl barley
1Parmesan rind (optional)
1cupminiature shell pasta
1can garbanzo beans, drained and rinsed
1cupcabbage, chopped
1cupfrozen green beans
1cupfrozen peas
1cupfresh spinach, packed
Parmigiano Reggiano, freshly shredded
Instructions
Heat oil in a large stock pot and add the onion, carrots, and celery. Cook for about 5 minutes until onions are tender. Add the garlic and cook 30 seconds. Stir in the seasonings, tomatoes, and tomato paste, and then the water, bouillon, kidney beans, barley, and Parmesan rind. Bring to a boil. Cover, reduce heat and simmer for 30 minutes.
Add the pasta, garbanzo beans, and cabbage, cover and simmer 10 more minutes.
Add the green beans and peas and cook covered for another 5 minutes. Stir in the spinach. Serve soup topped with Parmesan.
