Corn, Cucumber, & Radish Tartine

  • 5 slices artisan pumpernickel bread
  • 5 teaspoons butter, room temperature
  • 1/3 cup radishes, diced
  • 1/2 cup cucumber, diced (seeds removed)
  • 1/2 cup corn, grilled or roasted is best
  • 2 tablespoons cilantro
  • 1 tablespoon fresh lime juice
  • Fresh ground salt and pepper to taste


  • Combine radish, cucumber, corn, cilantro, lime juice, and salt and pepper together in a bowl. Set aside.*
  • Toast bread and scrape 1 teaspoon butter on each slice. Cut each slice of bread in half and then pile about 2 tablespoons relish on each or allow guest to apply their own. Serve immediately after applying to warm toast.


*This can be made a day in advance.
