Ingredients
12ouncesshredded hash brown potatoes, thawed, (~2 cups)
Preheat oven to 425°F and grease a deep 9-inch pie plate.
Press fresh or thawed hash browns between paper towels to remove excess moisture.
Transfer to pie plate and firmly press them to the bottom and sides to make a crust. Melt 2 tablespoons butter in a small bowl and brush over all of the crust. Bake for 20 minutes.
Meanwhile, place onions and remaining tablespoon butter together in a bowl, loosely cover with plastic wrap and microwave for 1 minute.
In a medium size bowl, whisk together eggs, cream, and seasoned salt.
Once crust is done cooking, remove from oven and turn temperature down to 350°F. To the cooked crust, layer on onion, ham, and cheese.
Pour the egg mixture over the layers and lightly sprinkle the top with nutmeg and fresh cracked pepper.
Bake for 25-30 minutes until a knife comes out clean when inserted in the middle. Let quiche rest for 15 minutes before slicing and serving. Garnish with chives.
