Ingredients
For the Salad:
6cupsGreens, Spring Mix or Romaine
2chicken breasts, grilled and sliced
8slicesbacon, cooked and chopped
4hard boiled eggs, cut into quarters
2cobs corn, grilled and cut off (or use frozen or canned fire roasted corn)
2avocados, sliced
1cupcucumbers, sliced
1 1/2cupsberries
4ouncesgoat cheese, crumbled
Salt and pepper to taste
For the Vinaigrette:
1/2cupextra virgin olive oil
1/4cupbalsamic vinegar
3tablespoonslime juice
1teaspoonlime zest
1teaspoondijon mustard
1teaspoonhoney
1/2teaspoonsalt
1/4teaspoondried basil
1/8teaspoonfresh cracked pepper
Instructions
Place the greens in a large bowl or platter. Arrange the chicken, bacon, eggs, corn, avocado, cucumber, berries, and cheese on top of the lettuce. Season with salt and pepper.
For the dressing, place all vinaigrette ingredients together in a jar and shake. Drizzle desired amount of dressing over the salad and serve immediately.
