  • 1 zucchini, sliced 1/4 inch thick
  • 1 summer squash, sliced 1/4 inch thick
  • 1/2 sweet yellow onion, sliced thin
  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • Salt & pepper


  • Heat oil and butter in a skillet over medium-high heat.
  • Cook the onion for 2-3 minutes until it starts to soften. Add in the squash and zucchini and sauté for 3-4 more minutes until fork tender.
  • Season with salt and pepper and serve.
