Place oil and 1 kernel in a 6 quart pot over medium-high heat, covered. Once the kernel pops, add in the remaining kernels, swirl the pan to coat them all in the oil, and then place the lid back on. Continue to cook and when you hear the kernels rapidly popping, shift the lid so it is open just a crack to allow steam to escape. Occasionally gently shake the pan.
When popping slows to about 1 every 1-2 seconds, turn off the heat, wait for a few remaining pops, and then remove the lid. Season with salt or other spices and serve.
