Ingredients
1poundground pork sausage
2teaspoonsoil
2cupsbell pepper, diced
1/2sweet onion, diced
1cupspinach, packed and chopped
6cupscrusty French bread, 3/4 inch cubes
12largeeggs
3/4cupwhole milk or half-and-half
1teaspoonsground mustard powder
1teaspoonsalt
1/4teaspoonfresh cracked pepper
1cupcheddar cheese, shredded
Instructions
Brown the sausage over medium-high heat. Remove from pan onto a paper towel lined plate to drain.
Add oil to pan over medium heat. Add onions and cook for 2 minutes. Add bell pepper and cook for about 5 minutes until tender. Add the spinach and cook another minute until wilted. Mix in the sausage. Set aside.
In a large mixing bowl, whisk the eggs. Mix in the milk, mustard, salt, and pepper. Stir in the cheese.
Grease a 9x13 inch pan and place bread cubes in the bottom.
Spread the sausage mixture on top of the bread and then pour egg mixture on top. Sprinkle with salt and pepper and cover with plastic wrap and let refrigerate for 2 hours or overnight.
Bake at 350°F for 40-45 minutes uncovered until golden, crisp, and a toothpick inserted comes out clean. Let cool 10 minutes before slicing and serving.
