115 ounce Hunt's Diced Tomatoes, Fire Roasted Garlic, rinsed
1jalapeno, finely diced
1/4cuponion, finely diced
1/4cupcilantro, chopped
Juice of 1 lime.
For the Chicken:
66 ounces boneless skinless chicken breasts, pounded to 1/2 inch thickness
2chipotle peppers in adobo sauce, minced
2teaspoonsoil
1/4teaspoonsalt
Juice of 1/2 lime
Instructions
For the Salsa:
Mix all the salsa ingredients together and place in fridge until ready to serve.
For the Chicken:
Preheat grill to medium-high heat. Combine the chipotle pepper, oil, salt and lime juice. Toss with the chicken and then grill on each side for about 4 minutes or until done.
Arrange chicken on a platter and top with the salsa. Serve immediately.
