2poundssweet potatoes, peeled and diced 3/4 inch pieces
2tablespoonolive oil
1/2teaspoonkosher salt
Optional Seasoning:
1/2 teaspooneach: chili powder, paprika, kosher salt
1/4teaspoongarlic powder
Instructions
Preheat oven to 425 degrees F.
Place diced potatoes on a large rimmed baking sheet. Drizzle with olive oil and sprinkle with kosher salt (or optional seasoning mix). Toss to evenly coat and then spread out on the pan.
