Ingredients
1poundFrench Green Beans
1teaspoonsalt
2tablespoonsbutter
1/3cupsliced almonds
1/4cupsweet onion (or shallots), finely minced
2clovesgarlic, minced
2teaspoonsfresh lemon juice
1teaspoonlemon zest
Instructions
Fill a large skillet with 1/2-1 inch of water and bring to a boil over high heat. Add the green beans and salt and cover with a lid. Boil for 3 minutes or until beans are bright green and crisp-tender. Drain and set aside.
In the same skillet, melt the butter over medium heat. Add the almonds and shallots and cook for 4-5 minutes until almonds are toasted and shallots are tender and caramelized.
Add the garlic and green beans (and additional optional 1-2 teaspoons butter). Gently sauté for 30-60 seconds until combined and garlic is fragrant.
Remove from heat, add in the lemon juice and zest and toss. Season with salt and pepper, to taste.
