Ingredients
For the Soup:
1poundground beef
1 1/2cupscorn, (canned or frozen)
1onion, diced
1(15 ounce) canblack beans, drained and rinsed
1(15 ounce) cankidney beans, drained and rinsed
1(4.5 ounce) candiced green chilies
1 (15 ounce) candiced tomatoes
1(15 ounce) cantomato sauce
2cupsbeef broth, (or bouillon and water)
1/4cuptaco seasoning
For the toppings:
Avocado
Cheese
Cilantro
Jalapeno
Sour Cream
Tortilla chips
Instructions
Cook the onions and beef in a non-stick skillet over medium-high heat until beef is browned. Use a wooden spoon or Mix N Mash to break the meat apart as it cooks. Drain off fat and transfer to the slow cooker.
Add the remaining soup ingredients, stir together, and cook 6-8 hours on LOW or 4-5 hours on HIGH until onions and beef are tender.
