  • 2 pounds extra lean ground beef
  • 2 eggs
  • 1 cup Panko bread crumbs
  • 2/3 cup ketchup
  • 2/3 cup barbecue sauce
  • 1/3 cup onion, finely diced
  • 1/3 cup red bell pepper, finely diced
  • 1 clove garlic
  • 1/2 tablespoon worchestershire sauce
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon pepper

  • Preheat oven to 350 degrees F and lightly grease the sides of 20 muffin tin wells.
  • Mix together all the ingredients. This is easiest to do with your hands.
  • Place 1/4 cup meat into each muffin well. Using a large trigger ice cream scoop works really well for portioning the meat.
  • Press the meat mixture down flat and then drizzle with extra ketchup if desired.
  • Bake for 20-23 minutes until thermometer reads 160 degrees F.
  • Let the mini loafs sit for a few minutes and then use a fork to pop them out.
