Ingredients
1poundground beef
1teaspoonoil
1cuponion (sweet or yellow), finely diced
2clovesgarlic, minced
24ouncesmarinara sauce, (3 cups)
6ouncesfarfalle noodles, (about 2 cups)
2cupsbeef broth
1/2teaspoonsalt
1cupmozzarella cheese, (about 3 1/2 ounces)
3/4cupricotta cheese

Parmesan Cheese, grated
Italian parsley, chopped
Instructions
Cook 1 lb. ground beef in a skillet over medium-high heat. Cook and crumble until meat is browned. Drain off grease. Set aside.
Add 1 tsp. oil to pan and reduce heat to medium. Add 1 c. diced onions and cook for 5 minutes until translucent. Add 2 cloves minced garlic and cook 30 more seconds.
Add in 24 oz. (3 c.) marinara sauce, 2 c. beef broth, 2 c. noodles, 1/2 tsp. salt, and the cooked ground beef. Bring to a boil, reduce heat to low, cover with lid, and let simmer for 16-18 minutes or until noodles are al dente (stirring every 5 minutes). Remove pan from heat.
Stir in 1/2 c. of mozzarella cheese and then sprinkle top with the remaining 1/2 c. mozzarella cheese. Dot the top with 3/4 c. ricotta, cover pan with lid, and let it sit for 2-4 minutes until cheese melts.
Garnish with parmesan and parsley. Serve immediately.
