It’s moving week for us which means I’m
a bit stressed. My husband is even more stressed (and for good reason!) because he takes the biggest test of his life in a week from today– Step 1 of the medical boards. He is totally going to rock it though (but prayers are definitely appreciated, welcomed…) because he has been studying for it for the last two years!
Luckily we’re moving just 10 minutes away but gosh I sure hate boxing things up… especially all of our books. I finally decided to part with my text books but my husband really likes to read so we have like 5 really heavy boxes full of them. I should admit though that one box is full of my cookbooks and I’m not parting with those! Packing up the kitchen is pretty bad too especially since becoming a food blogger (I’ve accumulated A LOT of dishes). Cross your fingers nothing breaks!
So if you haven’t noticed, fruit is back in season and tastes oh so good. I’ll take a bowl of sweet refreshing fruit any day but it is especially perfect during the hot summer and is therefore one of the perfect sides to enjoy at a barbecue.
Dip is fun to have with fresh fruit but can often be very high in calories and fat (though is amazing) making your healthy side or snack more of a dessert. This dip however is half the calories and fat of traditional fruit dip (you know, that one that’s just a stick of cream cheese and a jar of marshmallow cream) because it’s made with Lite Cool Whip and low-fat yogurt. It’s still sweet and creamy but also so refreshing and not to mention way easy to throw together. We’re talking less than 2 minutes!
Enjoy your spring and summer while dipping your fruit in this yummy low-fat fruit dip out by the pool!
