Baked Tilapia

This baked tilapia is so simple and yummy! Dip the fillets in melted butter and then bread in a combination of crushed cornflakes, parmesan, and ranch seasoning mix. Pair it with Simple Orzo Rice and a side vegetable like Quick & Easy Green Beans Almondine or Parmesan Brussels Sprouts.

Ingredients for Parmesan Crusted Tilapia:

  • Tilapia– This fresh water white fish has a very mild taste. It is high in protein and low in fat.
  • Cornflakes– Grain based cereal is a great way to create a crispy coating.
  • Parmesan Cheese– This aged hard Italian cheese adds flavor and crispiness when baked.
  • Ranch Salad Dressing Mix– This is an easy way to add a lot of flavor.
  • Butter– Can’t go wrong with using butter to bread your protein! It adds flavor and results in tender moist meat.
  • Lemon– Lemon juice squeezed on fish before enjoying adds a pop of brightness and also enhances the taste of the fish.

FAQs

What’s a good substitute for cornflakes for breading?

Don’t have cornflakes? Crush up crackers (like Ritz), pretzels, or other unsweetened cereal like Chex. Bread crumbs also work. I prefer Panko bread crumbs for their larger crumb and crispier texture.

What can I used instead of Ranch Mix?

Don’t have Ranch Dressing Mix on hand? Use 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. parsley, 1/2 tsp. dried dill, 1/2 tsp. salt, 1/4 tsp. mustard powder, and 1/4 tsp. pepper.

TOOLS USED TO MAKE THIS PARMESAN CRUSTED TILAPIA:

  • Half-Sheet Pan– I LOVE these pans. I use them all the time for sheet cakes, cookies, roasting vegetables, baking chicken…
  • Ranch Seasoning Mix– This is great for making semi-homemade dressing but also for adding to other recipes like Ranch Chicken and Creamy Cilantro Lime Dressing.
  • Microplane/ Zester– I use this from zesting lemon and limes to finely grated Parmesan cheese or chocolate.
