I use to say that I hated lemon in my baked goods. Then I grew to appreciate its presence occasionally but now I’m totally converted. Isn’t fun how our taste buds change as we get older? Or maybe we just open up more to trying and accepting new things. Either way, I’m diggin these Lemon Bars!These lovely little Lemon Bars are made with a buttery shortbread crust topped with a tart yet sweet custard filling making them irresistible.

I’m loving lemon so much that I’m actually making a lemon cake tomorrow, or in the near future… basically, as soon as time allows. Carly has been skipping naps more often than taking them so until preschool starts the blog has been put on the back burner. Back to these lemon bars. They are too good to resist! Just don’t put birthday candles in it. Been there, done that… and our friend got his eyebrows slightly singed. Blowing out the candle blew the powdered sugar into a giant dust cloud that quickly became a cloud of fire. It was shocking, scary, and hilarious. Classic Lemon Bars

Ingredients

For the Crust:

  • 10 tablespoons butter, room temperature
  • 1 1/4 cups flour
  • 1/2 cup + 2 tablespoons powdered sugar
  • 1/4 teaspoon salt

For the Filling:

  • 3 large eggs, room temperature
  • 1 cup granulated sugar
  • 3 tablespoons flour
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice, about 2 lemons
  • 1/2 teaspoon baking powder

Instructions

For the Crust:

  • Preheat oven to 350 degrees F and lightly grease a 9x9 inch pan.
  • Mix the flour, powdered sugar, and salt together. Cut the butter into the mix until crumbly and then press into the bottom of the pan.
  • Bake for 15-18 minutes until lightly golden. Meanwhile, make the filling.

For the Filling:

  • Whisk all the filling ingredients together until combined.
  • Pour over the cooked crust and place back in the oven for 17-20 minutes until filling is set.
  • Cool completely, dust with powdered sugar, cut into squares.

    Thanks Melanie! I made these luscious lemon bars for a bridal shower and they were a hit!!! Only problems I should have made 2 pans!!! Loved them!
