I shared the recipe for Honey Cilantro Lime Shrimp a few weeks ago and I am finally getting around to sharing how we turned it into a delicious healthy meal by making Honey Lime Shrimp Quinoa Bowls.Feed your family a quick and healthy meal with this Honey Lime Shrimp Quinoa Bowls topped with Avocado Dressing. So, we’ve lived on Long Island for 2 months now and I just found out last week that the school district we’re in has a pre-K program. When we first moved here we only had one car so I didn’t think it was even be possible to sign her up for one we’d have to pay for. God is looking out for us because we were able to afford a second car and get Carly in free half-day pre-school.

I’m selfishly excited to have a completely no-kid afternoon since Natalie will be napping, but I’m also so glad Carly will get to learn and socialize with other kids and make some new friends here. At least once a week she has had a sad face and says she wants to move back to Omaha. It breaks my heart… and I feel the same way. Although most of my friends have moved away too. Change is tough.

With my daughter starting school I’ll actually have a little bit more time to dedicate to my site and bring you more delicious and healthy recipes like Baked Chicken Parmesan Spaghetti Squash, Southwest Cornbread Sloppy Joes, and this quinoa bowl. I’m super excited!

Let’s talk about this Honey Lime Shrimp Quinoa Bowl staring at us in the face. She’s a beauty! I should have made more of the quinoa poke out in these photos but I was just trying to hurry and get these photos taken so I could dig in. Having self-control when you are standing 2 feet away from scrumptious looking and smelling food is so hard but I do it for you. Since you can’t smell or taste a sample. It’s my job to fully capture the deliciousness of a dish with a photo which despite after having done this for 3 years, is still not super easy for me.

These delicious dinner bowls are full of protein with the shrimp, beans, and quinoa (I used tricolor but you can use whatever quinoa you have on hand or is cheaper). Then to throw in some colorful veggies we’ve got tomatoes, and roasted corn. And then of course you’ve gotta toss in some avocado for creamy healthy fats.

Oh and to bring it all together, drizzle on the delicious Avocado Dressing made with plain Greek yogurt. I has a similar consistency to mayonnaise but with out the fat and adds lots of protein. Enjoy!

Tools used to make this Honey Lime Shrimp Quinoa Bowls Recipe:

Knife Set– I got this when I got married almost 8 years ago. I use them multiple times a day and they’re still going strong!

Cutting board– I love having various sizes of cutting boards and these are awesome because they won’t slip and slide around on the counter.

Non-stick fry pans– I love these and use them for everything!

Shrimp & Quinoa Salad

Honey Lime Shrimp Quinoa Bowls

Ingredients

  • 1 recipe Honey Cilantro Lime Shrimp and Avocado Dressing
  • 1 cup quinoa
  • 2 cups water
  • 2 roma tomatoes, chopped
  • 1 can black beans
  • 1 can roasted corn
  • 1 avocado, sliced
  • 2 tablespoons Cilantro, for garnish

Instructions

  • Combine quinoa and water in a sauce pan and bring to a boil. Cover, reduce heat to low, and cook for 20 minutes. Meanwhile, make the Honey Cilantro Lime Shrimp & Avocado Dip. Thin the dip with milk or water to get a dressing consistency.
  • Assemble bowls with the cooked quinoa and top with black beans, corn, tomatoes, and shrimp. Drizzle with avocado dressing.

    Tried this a few days ago and it was delish! The homey lime shrimp are so good (I used 1/3 cup honey to 2# shrimp). The avocado dressing is out of this world. Will definitely make it again!
