I know a lot of you have resolutions to eat healthier this year and the best place to start is with breakfast. Don’t even think about skipping it or eating a Pop Tart. Grab some berries, nuts, and yogurt and make a Nuts About Berries Smoothie Bowl!Start your days out right with a refreshing Nuts About Berries Smoothie Bowl that takes all of 2 minutes to throw together.

It’s no secret that I LOVE dairy. I eat it daily– milk with breakfast, cheese on my sandwich, cream in pasta sauce and ice cream, and butter in my cookies. I’ve been very fortunate to not have any food allergies but I’ve had close friends who are lactose intolerant or have had to cut out all dairy for a whole year because their nursing baby couldn’t tolerate it. When I hear of people like this I think “Oh. My. Gosh! I could never do that! What would I eat? I’d have to give up so many delicious foods!” But then I remember 1)- Asian food! and 2) dairy replacements to create awesome high-calcium breakfasts like this smoothie bowl.Start your days out right with a refreshing Nuts About Berries Smoothie Bowl that takes all of 2 minutes to throw together. You can find plant-based, dairy alternative products like Silk and So Delicious in the Natural Foods Department of your local Kroger store. Will you just look at all those options?! Seriously took me forever to decide which one to get because I wanted to try them all! Whether you’re allergic, lactose intolerant, nursing a baby with food sensitivity, or just don’t want to consume dairy, there are so many great delicious alternatives! Most of the alternatives have a similar calcium level as dairy products but not always as much protein unless it’s a high protein line.

And along with tons of bins of nuts, seeds, granola… you can make your own various nut butters! So cool!

Back to this gorgeous smoothie bowl though. The smoothie is made up of frozen mixed berries, banana, Silk’s dairy free yogurt alternative, and Silk almond milk. So refreshing and perfectly sweet.Start your days out right with a refreshing Nuts About Berries Smoothie Bowl that takes all of 2 minutes to throw together.

And then there’s the toppings. I love how beautiful fruit and nuts are! I highly recommend roasted nuts. Have you ever roasted your own? Just get some nuts in the baking aisle, spread them on a pan and bake for 8 minutes and the flavor is enhanced and the nuts become the perfect texture. Gosh I’m nuts about this smoothie bowl! Sure you could skip all those toppings and eat it in a glass if you’re in a rush… but the fresh berries and crunchy nuts are the best!

Nuts About Berries Smoothie bowl

Prep Time2 mins
Total Time2 mins
Servings: 2
Author: Garnish and Glaze

Ingredients

For the Smoothie:

  • 3 cups mixed berries, frozen
  • 2 bananas, sliced, frozen*
  • 2 Silk Vanilla Yogurts
  • 1/2 cup Silk Almond Milk

For the Toppings:

  • Fresh berries
  • Roasted nuts, almonds, walnuts, pecans**
  • 1/2 teaspoon flax seed

Instructions

  • Place berries, banana slices, yogurt, and milk in a blender and puree until smooth. Pour into 2 bowls (or you can omit the topping and pour in a glass/cup to drink for an on-the-go breakfast).
  • Top with fresh berries, nuts and flax seed. Serve immediately.

Notes

*Fresh bananas are fine to use. Your smoothie will be thinner. If you want it thick just use less almond milk.
**You can buy them roasted or do it yourself. Heat oven to 350 degrees F, spread nuts in a single layer on a baking sheet and cook for 8 minutes.

Kim, Each container is about 2/3 cup so put in 1 1/3 cups.
