While driving home from taking my daughter to school today, I finally saw some leaves changing color! Yay! Of course it is still quite warm and we’ll be going to the beach after school but the weather won’t stop me from eating all the pumpkin I can. We’ve already been enjoying Pumpkin Bread with Cream Cheese Frosting, White Chocolate Pumpkin Cheesecake, and Whole Wheat Buttermilk Pumpkin Pancakes but our most recent favorite is this Overnight Pumpkin French Toast Casserole.

I’m all about the sweet type of breakfasts. The sweet and more dessert like the better! Now, I don’t eat like that every morning but at least one weekend morning has to have a fun and yummy breakfast or else it wouldn’t truly be a weekend. Right? But if you don’t have a sweet tooth like me you can omit pour syrup on top and just enjoy a nice and pretty dusting of powdered sugar on top. Just know you’re missing out.

Prep this Pumpkin French Toast Casserole at night and wake up to enjoy a relaxing weekend morning with a delicious breakfast with the family.Since this casserole is pretty big, it’s the perfect thing to bring to Sunday brunch with family and friends. All the prep work is done the night before so that all you have to do in the morning is pop it in the oven. Mornings can be rough and often the last thing you want to do is spend time cooking you’re hungry and all you want to do is be back in bed so this breakfast casserole is a dream come true.

Prep this Pumpkin French Toast Casserole at night and wake up to enjoy a relaxing weekend morning with a delicious breakfast with the family.So, the night before, you’ll dice up some day old French (or even better Challah)bread and whisk together the custard- cream, milk, eggs, pumpkin, and spices. Then just pour the custard over the French bread, cover it, and let the bread soak up the custard as it sits in the fridge all night. The next morning all you have to do is mix together the streusel ingredients, sprinkle on top, and bake for about an hour. Then you have time to set the table, take a shower, or just lay in bed and watch Netflix. No judgement here!

Overnight Pumpkin French Toast Casserole

Ingredients

For the French Toast:

  • 1 loaf day old challah bread, cubed
  • 1 cup half-and-half cream
  • 1 1/2 cups milk
  • 3/4 cup brown sugar
  • 6 eggs
  • 1 cup pumpkin puree
  • 1 tablespoon vanilla extract
  • 1 tablespoon pumpkin pie spice

For the Streusel:

  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup pecan pieces
  • 2 teaspoons cinnamon
  • 5 tablespoons butter, melted

Instructions

  • Lightly grease a 9x13 inch pan and place bread cubes in it.
  • In a mixing bowl, combine cream, milk, brown sugar, eggs, pumpkin, vanilla, and pumpkin pie spice. Pour over the bread cubes. Cover and place in the fridge overnight or at least 3 hours. 
  • When ready to bake, preheat the oven to 350 degrees F. 
  • Combine all streusel ingredients and mix until crumbly. Sprinkle over the bread cubes and then bake for 50-60 minutes or until golden brown and set. Sprinkle with powdered sugar and serve topped with maple syrup.
