Watermelon Feta Salad

Watermelon Salad is the perfect refreshing side dish for your next barbecue! This beautiful and easy to make salad is loaded with sweet watermelon, crisp cucumbers, feta cheese, and fresh mint, all tossed in a simple dressing.

Hot summer weather calls for all the refreshing foods like Watermelon Fete Salad. Is there any other fruit as refreshing as Watermelon? This salad is a must have at your next summer pot luck.

Watermelon Salad

The combination of watermelon, cucumbers, mint, cheese, and salt may seem a bit odd and out there but trust me, it works! You are going to fall in love with this gorgeous salad.

HOW TO MAKE WATERMELON AND FETE SALAD:

  1. Mix together olive oil, lime juice, and kosher salt. Set aside.
  2. Place watermelon, cucumber, feta cheese, red onion, and mint in a large mixing bowl. Pour the dressing over the top and toss.
  3. Sprinkle on flaky salt and serve immediately.

Why salt fruit?

It seems a little weird to salt fruit but just like adding salt to cake, cookies, frosting… adding salt helps to enhance the natural flavors that are already present. If fruit is under ripe the salt can also help to decrease the bitterness.

Can Watermelon and feta salad be made ahead of time?

Partially. You can place the watermelon, cucumber, cheese, onion, and mint in a large bowl and cover. Mix up the dressing in a separate container. Store both in the fridge until ready to enjoy.

Just before serving, pour dressing over the salad and toss together. Sprinkle on the salt for a final finishing touch.

Salt draws the water out of the watermelon and cucumber which is why you can’t add it until right before serving.

What is the best flaky salt?

My favorite flaky salt is Maldon Sea Salt. It has the biggest most gorgeous and delicious salt flakes. You can buy it from amazon here.

TOOLS USED TO MAKE WATERMELON CUCUMBER SALAD:

  • Knife Set– I got this when I got married 10 years ago. I use them multiple times a day and they’re still going strong!
  • Pyrex Mixing Bowls with Lids- I love my mixing bowls with lids because then I am able to stack things up with the fridge. Plus, glass is nice for when I need to microwave whatever is in it.
  • Buffet Tongs– I love that these salad tongs require only one hand to dish up your food. They’re also simple, beautiful, and classic.

Ingredients

  • 3 cups watermelon, cubed
  • 1 1/2 cups cucumber, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, sliced
  • 2 tablespoon fresh mint leaves, chopped
  • 2 tablespoons extra virgin extra light olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon kosher salt
  • Flaky Sea Salt

Instructions

  • Mix together olive oil, lime juice, and kosher salt. Set aside.
  • Place watermelon, cucumber, feta cheese, red onion, and mint in a large mixing bowl. Pour the dressing over the top and toss.
  • Sprinkle on flaky salt and serve immediately.
